Here in Alaska, we know halibut. Whether it’s reeled in off the coast or hand-selected at your favorite local fish market (ahem, may we suggest Kenai Fish Co.?), halibut is perfect for those nights when you want something quick, healthy, and just fancy enough to impress yourself

 

This lemon dill halibut recipe is light, zesty, and full of Mediterranean flavor without needing to cross the ocean (just your kitchen). Fresh dill, a splash of lemon, and a pinch of spice bring out the best in wild-caught Alaska halibut. Dinner in 15 minutes? That’s faster than your cousin can text, ‘On my way’ and still show up late!

  • 1 lb wild-caught Alaska halibut fillet, cut into 4 pieces (about 1-inch thick

  • Extra virgin olive oil

  • ½ to ¾ tsp kosher salt

  • ½ to ¾ tsp black pepper

  • 1 tsp Italian seasoning

  • ½ tsp garlic powder

  • 1 lemon (half for slices, half for juice)

  • 3 Tbsp chopped fresh dill

  • ½ tsp Aleppo pepper or red pepper flakes (optional but tasty)

SUBSTITUTIONS & TIPS
  • No fresh dill? Try parsley, basil, or even a little chopped chive.
    ​

  • Halibut not available? This also works with cod, rockfish, or even wild Alaska salmon if you’re feeling adventurous.
     

  • Aleppo pepper too fancy? Crushed red pepper flakes work just fine.
     

  • Low on Italian seasoning? A quick mix of dried oregano, basil, and thyme does the trick.
     

  • Want extra crisp? Broil for the last 1–2 minutes, but keep an eye on it. Fish cooks fast!

Preparation

​1. Crank the heat & oil the panPreheat your oven to 425°F and position a rack in the middle. Lightly brush a sheet pan with olive oil—just enough to keep things golden, not greasy.

2. Season like you mean it

Lay those beautiful halibut fillets on the pan. Sprinkle them with salt, pepper, Italian seasoning, garlic powder, and red pepper flakes if you're feeling bold. This is Alaska—we can handle a little heat.

3. Dress it up with lemon love

Drizzle the fish with olive oil. Slice half your lemon and lay the slices right on top of the fillets like little citrus blankets. Save the other half for later.

4. Bake 'til flaky

Pop the fish in the oven and roast for 10–15 minutes, or until it flakes easily with a fork. If you're not sure what "easily" means, think gentle fork nudge, not power tool

5. Finish strong and serve it up

Out of the oven? Great. Squeeze the other half of the lemon all over the fillets. Sprinkle generously with fresh dill, and serve immediately with your favorite sides. Rice, roasted veggies, a crisp white wine… well, you get the idea.
